We start our Dill and Caraway Salmon by sending a filet of salmon back to the water one last time—a brine of artesian water, pink Himalayan sea salt, fresh lemon, poached peppercorns, and bay leaf adds moisture and subtle layers of flavor to the fish without any extra fat. This moist, delicately-flavored salmon is served with a traditional English bubble & squeak, which we make with braised red cabbage, sauteed onions, and apples. We toss our bubble & squeak with a local honey vinaigrette to add a sweet and sour note, balancing the flavors of the salmon. Rice blended with garlicky kale, dill, and caraway seed complete this meal.
